Quantum Foods has prior professional experience importing containers of frozen seafood from South East Asia and Mexico. As a very strong frozen seafood purveyor Quantum Foods is host to a world of market insight and direct buying opportunities from a large network of primary seafood processors. When wild fishing and farming seasons limits availability and prices start to climb, strong inventory positions are taken so customers can benefit from food cost stability though out the year. 

 

With a direct buyer at the Honolulu fish auction floor and a warehouse at the center of the Los Angeles Seafood district, Quantum Foods is constantly shipping and receiving fresh

seafood products by land, sea and air. With an extensive selection of seafood from around the world Quantum Foods is sure to have the seafood product you are looking for.

Wild Shrimp

Farm Raised Shrimp 

  • Imported by our trusteed suppliers who only procure product from the most sustainable sources. 

  • All imported shrimp are granted the seal of approval from the internationally recognized BAP (Best Aquaculture Practice) Organization or similar certifying body. 

  • Vannemai White and Black Tiger Shrimp available year round

  • Product of Indonesia, Vietnam, India, Philippines, Mexico, Ecuador or Thailand

  • Premium head on Kauai Shrimp available in both Hawaii & the Mainland! 

  • Available as raw whole head on, headless shell-on, easy-peel, peeled and deveined (tail-on or off),and cooked in an array of sizes. 

Snow Crab

  • Seasonally sourced from preferred catcher processors

  • Harvested in Canada, Alaska and Russia 

  • Sweet Succulent flavor

  • Processed into clusters, cocktail claws, and picked leg & body meat

  • Clusters sized 4+, 5-8oz, 8oz up, 10oz up and 12oz up 

King Crab

  • Also seasonally sourced from preferred catcher processors

  • Harvested in Chile, Canada, Alaska or Russia 

  • Red, Gold and Centolla species available

  • Firm yet delicate sweet flavor 

  • Processed into Legs & Claws, Split leg n claws, broiler claws, picked leg and body meat, and merus sections 

  • Available sizes include 4/6, 6/9, 9/12, 12/14, 14/17, 16/20, 20/24 and 20+

Cold Water Lobster Tails

  • Wild Caught in traps and pots

  • More delicate and sweet than their warm water cousins

  • Tails from USA, Canada, West Australia & South Africa come in sizes 4oz, 4-5oz, 5-6oz, 6-7oz, 7-8oz, & 8-10oz with some larger sizes available seasonally. 

  • For canadian lobsters (Homarus Americanus) A wider range of value added products are available including

Ground Fish 

  • A vast selection of Wild and Farmed ground fish are available fresh and frozen year round to meet all your menu needs

  • Wild harvest ground fish include Baja Pacific Halibut, Alaskan Halibut, Nova Scotia Atlantic Halibut, Black Cod (Sablefish), Ling Cod, Icelandic Arctic cod, Alaskan Pacific Cod, Pollack, Haddock, Monkfish, Dover Sole, Turbot, and Petrale Sole

  • Farm raised Swai (basa), Tilapia and Catfish are great value items to help maintain quality and food costs.

Salmon & Trout

  • A variety of species available to meet your menu needs. 

  • All of our farmed salmon and ocean trout is sourced from sustainable farms in Canada, Norway, New Zealand and the Faroe islands.

  • Idaho rainbow trout available mostly all year round in a variety of sizes and cuts

  • Wild Steelhead, Pink, Keta, Sockeye, Coho & Chinook (king) are available fresh seasonally and frozen year round. (Don't forget about the Roe!)

  • Premium Cold Smoked Sliced Salmon and Trout using real natural hardwood. 

Pellagic Fish

  • A vast selection of Wild and open-ocean farmed fin fish are available fresh and frozen year round. 

  • Products sold include wild yellowfin and bigeye tuna from Hawaii, Fiji & Spain, Japanese Hamachi, Tasmanian Hiramasa, Blue Nose, Mahi Mahi, Opah, Swordfish, Rock fish, snapper, Sea bream (Orata), Sardines, Mackerel, Anchovies, Chilean Sea-bass (Patagonian Tooth-fish) Mediterranean sea bass and many more.

Oysters

  • Large selection of Live oysters available year round. (select harvest areas closed seasonally)

  • Harvest areas include S Puget Sound, Hood Canal, British Columbia, California Central Coast, Prince Edward Island, Alaska, Massachusetts, Mexico and New Zealand.  

  • Specific sizes and flavor profiles available upon request

  • Sized as cocktail, extra small, small and medium 

  • Note that some live shellfish are restricted by the Dept. of Agriculture in Hawaii to prevent the introduction of invasive specie. 

Mussels & Clams

  • Live and frozen cooked mussels and clams are available year round. 

  • Black mussels from Price Edward Island, Massachusetts, Maine, Washington and California

  • Green lip mussels from New Zealand offered live, whole cooked or cooked on the half shell. 

  • Manilla, short neck, littleneck, cherry stone, savory, razor, cockle, geoduck and chocolate clams available live seasonally . 

  • Be aware that some live shellfish are restricted by the Dept. of Agriculture in Hawaii to prevent the introduction of invasive specie. 

Squid/Calamari 

  • Harvested from wild runs throughout the world, squid is one of the most abundant, sustainable and healthy seafood options.

  • A variery of species including loligo spp, todorodes spp, Gigas spp (giant squid), and arrow available year round with fresh available seasonally. 

  • Available as whole round, whole cleaned, tubes and tentacles, rings and tentacles, tubes only, and steaks 

Spanish Octopus 

  • Wild hook-caught in Morocco FAO 34 and minimally processed in a state-of-the-art facility in Spain.

  • Available as raw tenderized for traditional Mediterranean preparation or precooked tenderized for sushi bar applications.

  • This octopus is far more tender and flavorful compared to the South East Asian imports.

  • Makes a deliciously unique center plate dish that is sure to impress your diners.

  • Available sizes: 2/4, 4/6, 6/8, 8/up

Scallops 

  • Diver scallops and bay scallops from both wild caught and farm raised fisheries are available fresh and frozen year round

  • Primarily sourced from Hokkaido Japan and New Bedford, MA

  • Offered in a variety of sized from U/10 to 100/200.
